An aromatic chilli oil infused with the intense flavours of salted black beans, Bill Poon made this originally for friends and family who sent empty jam jars to be filled. Bottled at the instigation of Helen Goh from Ottolenghi who tasted one of Bill Poon’s jars, it has become a favourite of many foodies. Unusual in that it uses salted black beans, Poon’s Extraordinary Chilli Oil has a depth and intensity beyond just heat.
Drizzle over: Noodles, rice, dumplings, dim sum, fried eggs, pizza, roasted vegetables. Stir into: hummus, pasta, sauces, marinades, salad dressings, stir-fries.
